What's the rationale with the games being played on these three days? What is there, 30-32 teams. Surely they could pump out some Saturday and Sunday games, considering the saturation of games on the Monday?

Remember that Monday when we see most of the games here is Sunday US time.

College football owns Saturday, so while ever they play games on that day then there will be no NFL. Actually I believe the U.S. Congress passed a law a number of year ago forbidding the NFL playing in opposition to College football.

As KF said Friday night is set aside for high school football.

NFL leaves Saturday's for the College spotlight, as the Colleges can then get the big TV dollars and forever act as the NFL's development league without costing the NFL a dime.

This. Also, Friday night is for high school football where states like Florida and Texas get crowds not far off the Roosters vs Dogs the other night.

With mike Davis active I see the 2nd rb position mixing up between the two as will the punt returns. Then you just go with the hot hand.
