Yeah with galaxy hops.

But in saying that, both citra and galaxy are arguably 2 of the most flavoursome hops going.

Now I wanna make a citra brew.

I just dry hopped my Red IPA with about 55grams of hops all up. Slightly reduced due to only hitting 7.4%abv. Will be a 4 day dry hop, 2 day cold crash and bottle. Should be nice. It's looking brown in colour ATM but hopefully will be red after cold crashing.

Yeah the brew shop was out of Galaxy and when I asked him when more would be in he said "May??".

Given the flavour profiles and AA% are just about the same it should work out fine. My last Pacific Ale clone was dry-hopped with 70g of Galaxy and was just about spot on.

I can't say enough good things about citra. Never had a bad brew using that hop.

Galaxy is a high demand hop internationally. Only a small portion gets sold to home brew suppliers, most snaffled up by professional brewers before it is even harvested.

Pretty in 2015 the allocation to brew shops was exhausted by about September or October, I remember it being very hard to get hold of. Nelson Sauvin gets like that too.

Pretty in 2015 the allocation to brew shops was exhausted by about September or October, I remember it being very hard to get hold of. Nelson Sauvin gets like that too.

Fat Yak would probably account for most of that. I remember Citra becoming very hard to get even midway through last year.

Trying to plan my next few brews.

I am due to make another stout, plan on just throwing down my regular oatmeal stout, probably hopped with Columbus. I still have a lot of my vanilla stout and by the time I finish that this should be good to go. Also want to enter some beers into the Ipswich show.

Next one I am going to do will be a first for me. Going to try a wheat beer. I am thinking of starting out with an American wheat just to get a feel for it and have something not too overpowering, plus I have centennial on hand to use up. If I like that, I'll throw down a German wheat beer closer to winter when I get some European hops for lagers.

Any of you guys have a go to wheat beer grain bill?

I've only made one wheat beer, which was an American wheat.

Was pretty much: 50/50 ale/wheat with a couple of hundred grams acidulated to lower ph.

I used Columbus to bitter and Centennial late. It's a pretty decent beer, but wheat isn't my favourite style.

70/30 will put you around the pacific ale mark, I've made plenty of summer ales with a similar ratio and they've all turned out well.

Yeah I have read that American wheat beers generally have a lower percentage of wheat than your European styles. 70/30, 60/40.

American wheats don't really have that banana/clove flavour going due to less wheat and using normal ale yeasts.

The reason why I want to make a wheat is I tried a burleigh brewing co Hef the other day and it was sensational. It's meant to be a heffe but I'd imagine it's flavour profile closer to an American wheat. It did not have much banana or clove notes at all and was amazingly refreshing

I just used m44 and it has enough of the bready aroma and pillowy mouthfeel to be distinctly a wheat.

I might tap the keg tonight and have a few schooners to see how it is travelling after a nearly a week on gas.

Just nailed OG with the Freezer Burn. The scent coming out of the cube with all those hops was something to behold! I bought pilsner grain by mistake so it will be a little lighter than Hop Hog and I boiled for 90min.

I made an all vienna APA on the weekend.

5kg vienna
5g Centennial FWH
40g mosaic, 35g chinook, 15g centennial in the cube

Much lighter colour than I was expecting. Have wanted to do a 100% vienna beer for ages, excited to try it.

The Stone & Wood Pacific Ale has turned out more like a Balter XPA clone. The Citra while similar to Galaxy is just not the same. It's absolutely delicious though.

The Freezer Burn is at about 1.019 and tasting quite bitter at the moment. It's got so much hop matter floating around in it though. Will dry hop in a few days once it hits FG but I'll need to use a paint strainer bag for all those hops.

I've been pretty busy but haven't posted here for some reason. On the weekend I kegged an APA and an amber ale. Need to pitch yeast on the vienna APA and an American blonde I made so I can clear up my cubes and brew again. My production has been outpacing my drinking (which is a rarity) and I love it.

Thinking about doing another cream ale and perhaps a lager down the track, really interested in trying to make some delicate styles to see how I'm doing technically.

The American wheat got 31/50 at the comp, in the bottom end of "very good" a few of the comments were along the lines of "not hoppy enough" even though the style guide says hoppiness should be low to moderate. Anyway I wanted it hoppier anyway so I'd enjoy drinking it more so I keg hopped with 25g centennial - Bang! Massive improvement within 24 hours, will leave the hops in til the keg kicks.

Gonna do a simple recipe this week. Just an easy drinker.

4kg pale
1kg wheat
200g Munich 1

Centennial and Columbus 10g each at 30 min

Centennial and Columbus 10g each at 0 min.

15g centennial dry hop.

Total IBU will be around 23. Aiming for around 5% ABV

I'm just gonna call this brew a summer blonde ale.
