Grandma's Orange Scones

I have very fond memories of these rather unusual scones, but they're lovely just served with lashings of butter.
Ingredients
Method
- 2 1/2 cups self-raising flour
- 1 pinch salt large
- 1 tbs butter
- 1 tbs sugar
- 1 tsp orange rind grated
- 1 orange juiced
- 1/2 cup milk
- 1 loaf sugar
Notes
- STEP 1 Set oven to 230C and preheat a baking tray.
- STEP 2 Sift flour and salt, then rub in butter. Add sugar and orange rind.
- STEP 3 Squeeze the juice from an orange, then measure 1/3 of a cup and add it to the milk. Stir this liquid into the dry ingredients, making a soft dough.
- STEP 4 Turn onto a floured surface, knead lightly and roll into desired thickness. Cut into 3-4cm rounds.
- STEP 5 Break loaf sugar into halves, dip into the orange juice, then press into the top of each scone.
- STEP 6 Sprinkle tray lightly with a little flour, place scones close together.
- STEP 7 Bake for 12-15 minutes.
Grandma used to recommend handling dough as little as possible.
Loaf sugar is also known as refined small cubed-shaped lumps of sugar.
