Of recent times, since I only started following in 2005
1. Steve Smith. Plays with the most heart out of anyone, which when combined with his lightning-fast feet and superior agility make him one heck of a receiver. It's a shame he probably won't make a HoF since he's injured way too often, but when he's healthy and on the field he's a difference maker.
2. Jermaine Phillips. Aside from being a member of my favorite team, he's a brutal hitter with good hands (makes a lot of INTs) who is always near the top of the tackles list after games.
3. Ronde Barber. A playmaking CB with great instincts. 1 more Pro Bowl and he's a HoF lock.
