Yeah, really no reason to not do that all the time, unless they're going to catch it and fall over the try line.
By doing new things in the important games you don’t give the coaches time to react and come up with a tactic to counter; ie if you know Penrith aren’t going to contest kicks, then you might land the ball further into the in-goal, or some other ploy that a smart, professional, full-time coach might devise.

There is also the media angle. Do it all year and it gives the talking heads something to complain about, such that when you come into the biggest games there is a narrative about ‘Penrith always tackles in the air, and are getting away with it’. We have seen before how that plays out.
