What's needed is a big fat lawsuit against any player who signs a contract and backflips. The club can claim that they missed other signings due to having funds committed.

It won't happen. A number of things related to contract signings are covered by an industrial agreement (namely the Players Collective Bargaining Agreement).

Further, even if it did, if the court upheld the original contract the worst they would do is prevent the player from playing for anyone else professionally. They can't force him to play for club x if he chooses not to.
