I think you'll find it's quite similar at most stadiums. I tried to take a soft drink I'd bought from Maccas into Parramatta stadium a few weeks ago but was told I was not allowed because they don't allow people to take in drinks which have 'corporate' emblems on them that are not sponsors. It's a bit of a joke really this policing.
At the cinema all you need is a couple of punks to rip your ticket a young lass to sell you a chocktop and a bloke to start the film. At the football you need security, people to assist you to park, ticket booth operators, light tower operators, big screen operators, ground announcers, etc etc etc. And that doesn't even cover the staff required to maintain a stadium. I could go on......
Do families care? No. When they are looking at spending their expendable income they are looking at value for money. Cheap night Tuesdays $12 weekends $18 in Perth. I thought everything was expensive here, seems cinema is the last cheap thing we have!
The stadiums in Melbourne are actually OK like this - you can take whatever into Etihad, the MCG or AAMI, security don't seem to care as long as it's not on the list of 'prohibited' items like glass bottles or cans (i.e. things you can throw).
MCG has a couple of Red Rooster and gourmet burger stands around the place too, much better than your standard generic stadium fare.
