I made one earlier today, like that one but I used apple cider vinegar and used half a cup of vinegar, maybe I should have only used a quarter, I also used maple syrup, but only like two table spoons, it was good, just not great.Using your own recipe you can tweak it to your taste.
As far as sugar free goes,
You'll need
2 cups of raw grated and peeled beetroots.
1/4 red wine vinegar
1 tsp mustard seeds
1/4 ground allspice
1/4 tsp cumin
1/2 tsp cinnamon
3/4 cup water
3/4 tsp salt
Whack it all in a pan over a high heat. Brint it to the boil, then simmer for 90min (or until beetroot is tender)
Job done.
also, I know you requested Sugar free, but if you do want to sweeten it a touch, add a little bit of honey. At least its natural sugar, and the honey would take the sting out of it a bit
