Made what the chileboys call 'dads kentucky fried chicken' last night! Just bought chicken pieces; in a bag mix 6 tablespoons of plain flour, a packet of french onion soup mix and a table spoon of salt and shake it up together. Then break an egg in a bowl and whisk it so it is even consistency, start coating piece by piece your chicken in the egg then throw each piece in the bag and shake it up so it is well coated then put on a baking tray and repeat till you have a full tray, then bake at 180 for 30 mins till golden brown.....in the mixture you can add a little chilli powder if you want the chicken spicey ;-) had baked potatos and pumpkin in honey glaze and a brocolli and avocado salad in lemon juice..........that's my lunch for today too
