I was at the 4WD supa centre and they had these small smokers for $70 so bought one for the hell of it. Went straight to pulled pork and cooked for a good 4 hours before it all turned to shit. Too hard to control the temperature on this thing and probably best I learn to cook something easier that doesn't take all day. Was a bit of fun. Will just try a steak next time and get it right and go from there.

they are an art and well worth the effort, but yeah I f**ked up a few attempts

a few tips

  • you need lots of fuel and you need to top it up a few times to keep the charcoal embers red and glowing
  • best ones allow you to hang the meat from the top so it doesn't burn, like when you sit it in a baking dish, it can burn on the bottom if you cook for a long time
  • hanging meat like ribs and shanks, chooks and a big chunk of beef for pulled beef goes OK
  • most good ones have 3 levels so you can put a large tin cup, or pot of water below the meat, this stops it from burning and will steam the meat so its fall off the bone ready when done
  • my system is set it up, drink beer, go watch the footy, drink beer, top up the char coal at half time and drink more beer
  • by the end of the game you and the meat are well done
It took me about 5 or 6 goes to get it right and I always have at least 2 or 3 types of meat.

At the end of the day its worth the effort.
