The team lists on there are only what is named which differs often to who actually played and they still haven't posted the scorers from 3 weeks ago.

Can anyone point me the direction of a more complete source?

Try to the nswrl website or get a copy of the Rugby League News magazine, which always lists the scorers and 17-man squads that took the field from the week before.
