All over mate. North and South Islands over 3 weeks.

I'll leave the Nth Island to someone else, but suggest you have a rain coat for Auckland. Always pisses it down every time I go there!

Like Adam said it can really be 4 seasons in a day depending on which way the wind blows. Red hot if there is a northerly and freezing if there is a southerly. Summer doesn't really kick in until January in the South Island, so expect weather to be similar to late UK spring, high teens to mid twenties in the day and a bit chilly at night. Good news is, it is pretty dry especially in Canterbury & Otago so you shouldn't have many days spoiled by the rain.

Things I would definitely make some time for on the trip...

Queenstown
Fox or Franz Josef Glacier
Akaroa Harbour
Hanmer Springs
Lake Tekapo
A drive through Arthur's Pass
Milford Sounds
Pancake rocks/blow holes at Punakaiki
Glow worm cave tour at Charleston on the West Coast
Kaikoura (Haven't been since the earthquake last year, so don't know what state it is in but the scenery of mountains meeting the coast is unreal)

Cheers guys. Sorry for the late response. We are driving around the NI and on an organised tour of the SI so will be covering a lot of the places you have listed Morningstar. Thanks again.

Can anyone recommend a good sports bar where I can catch the Australia v England game? We are staying near the Sky Tower in Auckland.

I've watched test matches in the Sky Tower sports bar before.
And some other bar down on Queen St, it might have been Right Track or QF but i can't remember, I'm just going on google maps here.

If there's an All Blacks game on at the same time you're f**ked..
