Cooked man food tonight, for me and the brother (missus is out, bro is staying with us for the week while his house gets fixed). Toulouse sausages, mashed potato, with onion and Guinness gravy...

Hopefully in 2 hours i will be eating the best ribs ever!!!!.......

Pain in the ass trying to keep the heat low (250F) though, i got the knob on the weber all the way down and the gas bottle almost closed as well........

They look great and the weber looks brand new, is it? If not I feel like a pig for not cleaning mine to that degree.

Yeah mate, this is only the 2nd use of the weber so im a relative newbie to them. She will get dirty enough in time!!

Nice mate, did the meat just fall off the bone? I have personally done ribs twice on the weber. First time I stuffed them, 2nd time pretty good but probably cooked them a little too long.

I over cooked one of the racks but the other 3 were great!! Took 2 hours to cook but could have done with 30mins less cooking next time, all part of the learning procedure I guess. This is what i put in the sauce. The meat fell off the bone, there was a nice smoked layer of pink on the ribs so the weber did its thing well.

Tomato sauce, Worcestershire sauce, apple cider vinegar, apple juice, garlic, honey, parsley.

I put some seasoning, garlic salt and rubbed some mustard all over each rack of pork.

you can adjust the gas regulator on the bottle to lower the gas pressure, its alot more accurate than cracking open the valve on the gas bottle
