Mum was a firm advocate of the use of French onion soup.

She’d make a breadcrumb and fos mix like kfc but oven bake.

I’ve tried but I can’t quite replicate it.

Very warm and non judgmental person.

She pulled over and rescued a lone 9 year old child from the nature strip of the Epping hwy once and took him home.

Instead of thanking her, the kids mum swore at her, so mum rang the cops and docs.

the old French Onion Soup mix is such a versatile ingredient and retro classic, still remember the old party staple, French onion soup mixed through sour cream for a dip. The latest Coles magazine has a potato bake recipe in it using French Onion soup mix in it which i'm going to try and make one day.
Speaking of dinner tonight, it is steak, a nice piece of rump pan fried with some home made wedges and cooked tomato and tabouli.

Your mother sounds like she was a wonderful caring lady.

Balmain girl. Wharves and the working harbour. The three girls married go-getters including Penfolds Wines chief accountant. Mum was courted by a Hollywood/handsome businessman who went on to become a multi, but she chose Dad. Dad’s mum ( grandma) knew beatle George Harrison’s family well. George loved Australia, had a close affinity.

But as you know with familial friendships if there’s a star in there they are in that private zone. So we never met George etc. alas!

I cant remember Grandma ever talking about George’s family, we are not very celebrity indulged I guess.

But it’s well known that George would turn up to Beatle exhibitions unheralded and unannounced to mingle with fans. I’ve met one. He signed a lot of stuff, told stories and never wanted a cent.

Whipped these up as a snack to have before the footy.
Fresh garlic brushed on toasted sourdough with a nice marinated triple cream cheese and tomatoes cooked in olive oil and Greek oregano, was a nice starter before the pizza was delivered.

Elegant presentation, the flavours patiently wait to be captured.

I like the deception of what will be an ambitious and memorable attack on the palate.

Perhaps you worked in a nice restaurant at one stage!

Actually had egg and mayo sandwiches for lunch today and mixed some curry powder through the mayo, had to admit i found the Hellman's mayo disappointing, only bought it because it was on special, will be going back to the old reliable Praise after the Hellman's runs out as the basic mayo for the fridge.

Austere presentation of intrepid curried sausages and basmati rice.

Main feature is ultra slow cook caramelised onions ( no added sugar).

And the sauce, it’s important to put in some authentic curry paste from a proper Indian food shop. Bring the heat up to your liking.

I prefer an after-tang of manageable proportions for me, but it’s an individual thing.

The upgrade on this next time will be a nod to crispy fresh peas, corns and carrots and I’m going to try to singe the sausages and try to get a bbq effect.

Too many meals without healthy stuff can lead to culinary depression and regret.

Rice tips:

A lot of recipes have all these tricks.

If you want no fail perfect fluffy rice, friends, you’re just going to have to engage with it meaningfully and keep stirring it. Then you can test the quality every now and then.

These set and forget timer things are lazy.

Another say 10 minutes of your time to make sure the rice is 3 hats quality. It’s worth every second.

Onions

Think about what you’ll need and double it. They loose a hell lot of a lot bulk in the pan. Once the fry up is underway, you don’t want to have to add more.

And with the rice, it’s a labour of love. Don’t wander off to vacuum the loungeroom. Be master or mistress of all that you see on the stove.

Looks good although i rarely ever have rice with the curried sausages made at home. It is usually just the old fashioned curried sausages using Clive of India curry powder, onion, proper thick beef sausages, end up cooking off the curry powder with onion and garlic after browning and removing the sausages, add some stock after cooking off the curry powder ( chicken or vege ) and flour then add carrot, potato, peas, apple and if i have any i add sliced broccoli stems ( i save those for stir fries ) and the cut up sausages. Turns out like the old fashioned 70 s curried sausages i love. Some times i might chuck in sultanas if i don't use apple.

If i'm cooking rice, white rice or jasmine i just use the absorption method, it is a no fail way of cooking rice.

Apple sounds amazing.

Horries restaurant would be packed out every night.
