Austere presentation of intrepid curried sausages and basmati rice.
Main feature is ultra slow cook caramelised onions ( no added sugar).
And the sauce, it’s important to put in some authentic curry paste from a proper Indian food shop. Bring the heat up to your liking.
I prefer an after-tang of manageable proportions for me, but it’s an individual thing.
The upgrade on this next time will be a nod to crispy fresh peas, corns and carrots and I’m going to try to singe the sausages and try to get a bbq effect.
Too many meals without healthy stuff can lead to culinary depression and regret.
Rice tips:
A lot of recipes have all these tricks.
If you want no fail perfect fluffy rice, friends, you’re just going to have to engage with it meaningfully and keep stirring it. Then you can test the quality every now and then.
These set and forget timer things are lazy.
Another say 10 minutes of your time to make sure the rice is 3 hats quality. It’s worth every second.
Onions
Think about what you’ll need and double it. They loose a hell lot of a lot bulk in the pan. Once the fry up is underway, you don’t want to have to add more.
And with the rice, it’s a labour of love. Don’t wander off to vacuum the loungeroom. Be master or mistress of all that you see on the stove.
