Inspiring Horrie. Thank you.

Was very healthy to. Like a feed of leather jacket , the prices at some of fish markets for them lately have been outrageous but got these at a reasonable price. Hopefully when the weather warms up i will get out and down to a wharf with a handline and some prawns and mussels and catch a feed of tjem myself.

Well I’ve been making up my Lebanese Style Baklava tonight.

The Lebanese people enjoy spices and nuts, so apart from the traditional walnuts I’ve added macadamias.

Then working with the filo pastry. I didn’t find it too hard. Just defrost over time in the fridge. Tbe

This is about to go into the oven.

For the additional middle eastern element, I’ve added a hint of vanilla to the cinnamon.

I’m going to let it cool a bit before I make the honey and lemon sauce.


If I’d grown up in Lebanese culture, they’d be heaps more spices in the house and the honey would be richer.

The macadamia nuts are a good addition.

Italian style roast chicken with chat potatoes, eschalots, whole garlic, olives, capers and oregano and lemon rind.
sliced lemon stuffed inside the chicken also.

Was beautiful, chicken was good but the eschalots took in so much flavour and the cloves of garlic were so sweet and divine.

East meats west.

There’s a lebanese bread shop near us, $1.20 per pack of 8 or something. Cooked daily except Sunday.

The freshness is next level. lebanese bread is not meant to taste like cardboard.

I buy my Lebanese bread from a stall holder at Orange Grove markets, nice Lebanese lady sells awesome dolmades, baba ganoush,hummus taboulie, beetroot dip. cauliflower dip and lots of other goodies.

Will quite often cook a piece of BBQ steak with french onion soup mixed over it and wrapped in foil and in the oven, steak comes out succulent, great budget dinner .
Mum was a firm advocate of the use of French onion soup.

She’d make a breadcrumb and fos mix like kfc but oven bake.

I’ve tried but I can’t quite replicate it.

Very warm and non judgmental person.

She pulled over and rescued a lone 9 year old child from the nature strip of the Epping hwy once and took him home.

Instead of thanking her, the kids mum swore at her, so mum rang the cops and docs.
