The ball was dead in spirit even if not technically. And I am Australian. We were on the right side with the catch, we are not on the right side here.

Look at the bowler in the replay. Is he charging in to back up the stumps? No. Of course not. He has stopped. His body language is clear as day that he considers the contest over for that ball. I know Carey didn't wait but still all reasonable people feel the game is over as soon as the ball hits the keeper's gloves

I don't think you have a clue if you think there was any indication Bairstow was taking off for a quick single lol. He clearly marked his crease and walked down the pitch. If he was batting out of his crease and didn't return to mark it I'd have no issue.

Question is he out?
