That piano piece in Layla is nice....Although the community station I listen to sometimes has the annoying habit of chopping the song before then :?

How about Jessica by Allman Brothers.

A song called Bali Waters, by an old Aussi band Taman Shud

Morning of the Earth Soundtrack

Nothing wrong with a good drum solo Millers, I used to play plenty of them, you can tell by the crowd if its working or not.

Spanish fly - Eddie Van Halen. Dont know if its the sort of instrumental you meant as its just ed on an accoustic guitar but i think its pretty good.

Have to agree about drum solos. I wouldnt mind if they were short but over a long period there just isnt the variation you can get out of drums than other instruments to keep it interesting.

Tourniquet - K517 from the 1994 classic 'Vanishing Lessons'.......never has a xylophone ever been played so fast and sounded so insane but amazing.....and no, it actually sounds good - it doesn't suck

Prince.

His 2003 album NEWS featured four 14 minute instrumental tracks. Funky jazz-fusion semi-improvised brilliance.
