Take the lid off for the last hour. The moisture will evaporate and thickens any sauce and juices.

Or if you don't want to lose most of the sauce but want it thicker, just mix some cornflour in a little bit of water and pour it in. Thickens up a sauce nicely.

Back in the day, lamb shanks and (the larger veal/beef version) osso bucco were thrown to the dogs. Now shanks are more expensive that leg lamb per kg.

For mine the true king of the slow cook are beef cheeks using Gordon Ramsey's recipe w stout. Guinness is what I use, but I'm sure there is a hand made hipster craft dark beer that @Gary Gutful could recommend.
