When your beer is fermenting, the yeast you pitched reproduces and then dies. The dead cells give off some compounds that have undesirable flavours. The new yeast will go around and eat up them cells after fermentation . It makes for a cleaner tasting beer.Alright alright!! But what's the benefit other than clearer beer? My pale ale I did two weeks.
