When did Tooheys change from Tooheys Red/Blue to the just Red Bitter or Blue Bitter (or Gold as well IIRC).

A few years ago at least. Same thing, in the modern market they didn't want their name associated with the brands....fair enough with Red and Gold, but hell Tooheys Blue was a bit of an icon and is no worse than any other light beer. They're all water.
