Cool thanks! That'll work. I do know a place that sells the one I want, but hey the medium rice worked a treat, especially for my first time.
A lot of the paella I've had here are very generic (And a lot in Spain too) but when you eat an authentic one it's like a different world.
One of my mates in Spain is classed as basically being in the top 1% in Spain making it. He does the most traditional one invented. Taught to him by his grandmother which has been passed down for hundreds of years.
It's get the f**k out of here material.

So anyway, that is 2 racks of virgin lamb that has never stood on a cliff face. Coated in home made dukkah. Seared in a pan to render the fat down then roasted in ceramic for a gentle roast with some rosemary sprigs

Beetroot purée made from roasted beetroot, garlic, ginger, orange juice and rind, butter, sea salt flakes and cracked pepper.

Kiffler spuds and qld blue pumpkin coated in semolina and hot roasted in boiling wagyu fat.

On the side as well are some steamed asparagus that I wrapped in capocollo and threw in the skillet for a quick shallow fry.

Bloody beautiful!

Well it is match day and it is meant to be footy food but you will always get one or two that have to show off.

Might have to check the rule book and see whats in there.

I mean to say who the f**k sits down to that as they watch and listen to Rabs and the village idiots on Channel Nein.
Who amongst us is going to throw their Kiffler spuds and qld blue pumpkin coated in semolina at the screen as Ashley Klien rules Not try penalty Hartleys.

Feharkk give me a bowl full of beer battered chips lightly layered with mastercraft BBQ sauce. Wack hit the old flat screen .... "take that you cheating quigs" .... wipe and clean and away you go again for the next set.
