OT: the game day cook off thread

State of Origin.
My best mate died 4 1/2 years ago. He was the most passionate Queensland and Manly supporter that ever existed.
We had a deal where whoever's team went further the other would go to the ensuing finals games and be supportive of the friend, ie: buy the beers, food etc. If it was Manly vs Cronulla we sat in neutral territory.
Needless to say, I was way more "supportive" than he.
When it came to SOO he was in in his element, he remembered the bad times for Qld, and played the part of the hard-done-by-sonofabitch to the tee.
We all used to go to his place and watch the games, get pissed, and eat sausage Sangas or rolls.
As years went by, and the interest wore off, mates dropped out until there was just him and me.
Still we had our beers and snags.
Every year since his death I remember him this way.
2 years ago I was in Spain and got a sausage bocadillo from the local market.
I don't really feel like doing the plain old snag roll. So tonight I'll be doing my version of the Philly Cheesesteak. Which means I replace the steak with beef sausages.

Still eating the Pea N Ham tonight in my Tora Bora Cave. Only one more feed left out of the initial boiler full. But I do have plans in place.

Re State of O. Of course I will watch it. Of course I will cheer for the Blues. but honestly I couldn't really be bothered getting carried away with it anymore. It has been on the slide for years with me.

The days of rocking around friends places or going to the local (packed out) pub have long gone. Lucky to draw a half crowd to the one and only pub in town tonight. Interest has wained over the years so munch that the publican doesn't even run the courtesy bus tonight.

The local Backpackers used to run a big SOO night but that is no more.

Moi, I am going to curl up on the lounge with a blanket over moi as it is getting far-can cold up here in the tropics. Shit it got down to 12/13 degs this morning.

Bon appetite all and go the blues.

This will be mainly be directed @Russell Crowe's Band as he is an aficionado of the Philly Cheesesteak

Ingredients besides the beef sausage.
Red and green capsicum, Spanish onion, mushroom and garlic. All thinly cut.
Medium heat in oil until they're starting to get soft, but not too soft. I mix the virgin olive oil with mixed herbs, salt, pepper and Herbemare.
When nearly ready take them off and keep covered for warmth.
Beef sausages also on medium heat, same oil combination. Brown on the outside plus just cooked all the way through, then split them and cook more in the pan.
At this time have your oven warmed up to 100C. When you've split the sausages put your rolls in the oven.
The type of rolls are up to your own preference. Me, I like them a little crunchy so I get them for the local Viet bakery, the ones they use for the Viet pork, and chicken, rolls.
I hear them up for only a couple of minutes, they have the perfect crunch. I then spread butter, not margarine, over them to melt in.
I put the sausages on first, then the capo/onion/garlic mix. Next is your own personal cheese preference.
The oil that you've cooked the mix and sausages in... put a little water, it'll boil straight away. That's your gravy, pour a little of it over. Last is another personal preference, some American mustard.

A mate of mine came down from the coast yesterday and we went to a gig. When we got home he was starving so I said give me 10 mins and I'll make something up.
I made him one of these except I had no steak or sausage so I used pepperoni and olives as the "steak" component. Otherwise it was exactly the same.
He couldn't believe how good it Was, "better than any kebab!" Was all he kept saying.
I'm on a winner with this one.
