Yeah Coby is right. Pink beef still goes over 65 degrees in the centre and there's just not that much bacteria in red meat to start with. Thats part of why it can be dry aged with no ill effects. Unless it's off...doesn't matter how its cooked then, you're getting sick

Only eat meat if its well done...if i order a steak out I have to ask for very well done...half the time their definition of well done still seems a bit uncooked to me

To kill all strains of bacteria you must maintain a minimum temperature of 121 degrees for 15 minutes so you are taking a risk by eating rare steak.

Assuming the meat is bacteria free to start with, there is a low rick especially if its refrigerated but that wont stop air borne contaminants.

Having said that, thats not why I eat meat well done, I just like it better.

Does anybody remember those Uncle Toby's things called dip its or something, where you get the kangaroos, this chocolate or strawberry flavoured dip this other thing that looks like granulated nuts. All this talk of being six has made me crave those.

Australian Health standard is above 65 degrees C or below 5 (or thereabouts). It's probably changed a few degrees since I had to use it, but it's roughly that. That'll handle pretty much everything bar the extremophiles or the very tough.

Remembering, of course, that the guidelines are not about killing the bacteria....even taking it to 120+ won't do that entirely, and to do it you would have to make food inedible...they're about managing it at safe levels.

yeh, fair enough

I know of a thin rod strain of bacteria that doesn't die off at those temperatures, not sure if it would ever be found in meat though.
